Castella

Cake for all occations to give you some lift when the rainstorms and dark storm clouds dampens our spirits and depresses our emotions … just take a bite of this, says the divine mother 🙂 Feel the light within !

Not for vegans but if you are lacto-ovo vegetarians like me, then, Castella cakes are to die for. Quite literally … that being my intention in baking this time consuming but much loved cake, especially in the Japanese culture since the time it first landed in Kyushu island of Japan (from Nagasaki to be specific) in 16th century, from the visiting Portuguese Catholic priests.

My mother, unusual for a Japanese is a devout Catholic, used to send to those who were recovering from surgeries and exaustions calling them full of nutrition that’s going to help them recover. She used to send them to those going through tough cancer treatments, recovering from surgeries, nursing moms, aging and suffering as well as for the nursing and the vibrant. It’s spongy soft like dreamy sun kissed clouds and with minimal sugar but sweetened with HONEY.

A dear friend is dealing with her mother in a hospice service … there’s so little I can do for her but to bake and give my prayers along with … a loaf of Castella, not only for the dieing but for the living … both are actually simoultaneous… is the realization during the last one year as we faced this plague.

It does not seem like it for some of these yogis out there, but truth be told, really, I am living my yoga like never before.
