Tsukiji was once the world’s largest wholesale fish market. Today, it’s a shell of what it once was (as the heart and soul of the auction trade has moved to the ultra modern Toyosu location to which I have yet to visit) but the spirit lives on. I remember when I was in college, we were visiting as tourists – okay, guess I am still a tourist, an outsider here – so back then, would come 4am thinking it’s early enough to find out we were too late to witness the true heat, the action – by 4am the auction commerce was already over, the business was winding down. Most of these stores close around 1pm if not earlier so … these stalls are now all for tourists not for the real dealers and buyers in the food service industry.
